It&#8217;s a simple food trailer parked on the Black Rifle Coffee Company patio on 3rd Street in downtown Kalispell &#8212; no flashy signage, nothing that screams &#8220;stop here.&#8221; I was usually grabbing a burrito from Mother Teresa&#8217;s and just never thought twice about it.</p><p>Then one day I wanted a burger, and I figured I&#8217;d give it a shot.</p><p>That was a few weeks ago. I&#8217;ve been back twice since.</p><p>The smash burger is the move. It&#8217;s a simple build &#8212; smashed patty, cheese, pickles, sauce &#8212; but it&#8217;s executed really well. There&#8217;s a crispy edge on the patty that you only get when beef hits a properly hot flat top, and somehow the interior is still soft and melt-in-your-mouth at the same time. The sauce ties everything together and I still can&#8217;t fully describe what&#8217;s in it. You just have to try it.</p><p>I usually skip fries. I&#8217;m trying to watch what I eat and fries are the easiest thing to cut. But I ordered them this last visit because I figured if I was going to write about the place, I should do it right. Turns out that was a great call. Generous portion, well-seasoned, served with the same sauce from the burger as a dip. Some of the best fries I&#8217;ve had in the Valley, and I&#8217;m not saying that casually &#8212; there are solid fries at a lot of places around here.</p><p>A double and fries isn&#8217;t a cheap lunch these days, but when I compare it to sitting down somewhere with a tip on top, Chowboys still comes out ahead. And the line moves fast &#8212; I&#8217;ve watched pre-orders fly out before mine and still didn&#8217;t wait long, which is impressive for a trailer setup.</p><p>One thing to know: they&#8217;re on the Black Rifle patio, which closes at 6 p.m. So this is a lunch spot, not a dinner option. Hours can shift, especially early and late in the season, so check their Facebook page before making the drive.</p><p>But if you&#8217;re in downtown Kalispell around lunch and you haven&#8217;t tried Chowboys yet &#8212; go. I found it in 2020 because it was the closest coffee hut to my house. Five years later, it&#8217;s still my most consistent stop in the valley, and I don&#8217;t see that changing.</p><p>That consistency is the whole story, really. The Flathead Valley has no shortage of drive-through coffee huts. Copper Mountain Coffee and Florence Coffee Company both do solid work and both stay busy &#8212; you&#8217;ve probably seen the lines on a weekday morning. Copilot sits a little off the beaten path in a neighborhood near the Kalispell City Airport, which means the line is almost always shorter. But the location isn&#8217;t why I keep going back. I keep going back because the drinks taste the same every single visit, and the faces behind the window are familiar enough that occasionally they remember my name. For a drive-through, that&#8217;s genuinely rare.</p><p>A few things worth knowing if you haven&#8217;t been:</p><p><strong>They don&#8217;t do drip coffee.</strong> Espresso-based drinks only. If you want black coffee, you&#8217;re ordering an Americano. Not a dealbreaker, but worth knowing before you pull up to the window.</p><p><strong>The breakfast burritos are the real differentiator.</strong> Most drive-through huts in the valley have pastries. Copilot has actual breakfast burritos &#8212; eggs, bacon or sausage, melty cheese that still has some give by the time you get home. They&#8217;re protein-forward without being heavy, which is exactly what you want from a grab-and-go breakfast. The food runs a little pricier than I&#8217;d ideally like ($7.00 for the burrito), but it&#8217;s the best food option at a drive-through hut in this area, and there aren&#8217;t many alternatives.</p><p><strong>The staff stays.</strong> Drive-through coffee huts have notoriously high turnover. Copilot is a clear exception. I don&#8217;t think any of the same people are there from when I started going in 2020, but the turnover rate is visibly lower than most competitors. That stability shows up in the product &#8212; the drinks are consistent in a way that only happens when experienced hands are making them.</p><p>On my most recent stop I grabbed a sausage breakfast burrito and a chai latte, came to $11.75 before tip. The chai was balanced &#8212; slight spice, not oversweetened, right temperature. The burrito held together and was still warm when I got to my desk. Exactly what a good morning stop should be.</p><p>If you&#8217;re already in the neighborhood, it&#8217;s a no-brainer.
